Ingredients:
8 boneless Chicken Thighs
1 tin diced tomatoes
1 8 oz tin crushed pineapple
1 8 oz tin pineapple tidbits, drained
1 packet New Orleans style beans and rice
(Zatarain's is yummy)
Brown thighs in two tbl oil and drain. Prepare rice and beans as directed on the box. Bring to a boil. Stir in the undrained tomatoes and the crushed pineapple, add thighs, and reduce to simmer. Cover and simmer over low heat 30 minutes, until chicken is cooked through and rice is tender. This will be nice and saucy. Top with pineapple tidbits and serve. Serves 4 for a dollar per serving when ingredients are bought on sale.
Leftover rice is good the next day reheated and scooped up with brown bread.

Have I missed something here? I grew up on Long Island during the Sixties and Seventies (God help me), which were the heyday of the open-a-lot-of-cans school of cuisine, and I never heard of anything like this. Is "Long Island" now slang for "unexpected mixture" (as in LI Iced Tea)? It wouldn't be altogether unsuitable if it were - very peculiar place, Long Island, I've always thought so - but I wish I could hear about these things.
